Double Peanut Butter Cookies


Peanut Butter, oatmeal, and peanut butter cups... 3 ingredients leading to positively perfect peanut buttery heaven.  Add in those other cookie ingredients (flour, sugar, etc) and we have a cookie that tempted me to hide the batch and not share with a soul.  Caught in the act, Liv and her brother twisted my arm eagerly grabbing what they claimed to be their "fair share".  Needless to say, this batch didn't make it to morning.

Have you tried these Trader Joe's Mini Peanut Butter Cups??  Let me just say we had to return to the store more than once as they somehow seemed to evaporate before we actually got the cookies made.  Little bites of peanut buttery awesomeness, they added an outrageously incredible bite to the soft, puffy cookies.

I must also note that the cookie dough test (we do test all of our cookie dough, but we suggest you do so at your own risk due to the raw egg content...) was unquestionably amazing.  I may or may not have maneuvered my spoon gathering a few extra mini pb cups during the test, but I can without a doubt proclaim perfection.

Double Peanut Butter Cookies
Soft, with a tender bite, the oatmeal and peanut butter combo makes a perfect afternoon snack.  Or breakfast...

Adapted from Liv Life's Peanut Butter Oatmeal Candy Cookies

1 1/4 cups all purpose flour
1 cup oatmeal
1 tsp baking soda
1/4 tsp salt
1 cup creamy or crunchy peanut butter (we prefer creamy)
6 Tbs unsalted butter, softened (we use Earth Balance Buttery Sticks) 
1/2 cup light brown sugar
1/4 cup granulated sugar
1 egg
1 tsp vanilla extract
1 1/2 cups Trader Joe's Mini Peanut Butter cups (or more if desired!)

Preheat oven to 350ºF and line a two baking sheets with silicone mats or spray lightly with cooking spray.

In a medium bowl whisk together the flour, oatmeal, baking soda and salt.  Set aside.

In the bowl of a stand mixer, place the brown sugar, granulated sugar, butter and peanut butter.  Mix on medium speed until blended and fluffy.  Scrape the sides of the bowl as needed, then add the egg and vanilla, mixing another 30 seconds or so to combine.

Remove the bowl from the stand and add the flour mixture.  With a wooden spoon, mix until nearly combined.  Add the mini peanut butter cups and continue mixing to evenly distribute.

Scoop spoonfuls (ours were about 2 Tbs) of the dough onto the prepared cookie sheet and bake for 8-10 minutes or until lightly browned on top.  Allow to cool on the baking sheet for a few minutes, then remove to a wire rack to finish cooling... if they last that long!

  3. I am united with you in peanut butter love, especially when it comes to cookies! They look amazing. I am also a dough-eating fan, all three of us are. I guess I just like living on the edge. :)

  5. Ahh my brother and I are chocolate-peanut butter lovers, so these look awesome! And dangerous. Maybe I'll surprise him with these for his birthday? But now we know who they'll really be for ;) Heh heh.

  8. Oh I love those TJ peanut butter cups but wouldn't have thought to put them in cookies. These look and sound AMAZING Kim! I can see why they didn't last till morning!

  9. I love love love peanut butter and then add it into cookies!? I haven't had peanut butter once all week because I have been traveling for work and I feel truly deprived. These look great Kim!

  13. I've lost count of how many cookie doughs we have tasted. As far as I am concerned, that is the way to go! It would be like an executive chef never tasting the food...heehee.
