How many times do you head to a hotel breakfast only to be greeted with fat laden, white flour, soggy waffles? For years I've simply skipped breakfast and my kids, while excited at first, complained of not feeling well after these indulgent meals (frequently topped with whipped cream...). We, however, have fixed the issue on our past few hotel stays with what we've affectionately dubbed, "Hotel Waffles".
With a little bit of pre-planning, healthy waffles can be ready in no time right in your hotel room and no one needs to shower, worry about when the restaurant breakfast ends, or spend the morning recovering from unhealthy treats that weren't really enjoyed but cost a fortune anyway.
A simple DIY mix containing whole grains, chia and flax shake together with an egg, a little oil, milk and vanilla in a lidded jar. With a waffle maker brought from home (we travel with the Cuisinart Round Waffle Maker that I've had for years), we pre-measure the mix in zippy bags and store eggs and milk in a cooler.
I have small travel bottles of oil, vanilla and maple syrup that we pack along, and shortly after rising my family is happily sliding out of bed and starting their day the right way (healthy, quick and cheap).
Perfect for camping as well as hotels, you may want to make extra mix as these beauties work just as well on a leisurely weekend at home!
DIY Homemade Waffle Mix - AKA Hotel Waffles
Healthy, quick and cheap, these waffles with set you off the right way during your hotel stay. Filled with whole grains as well as flax and a little chia, your family will be excited for breakfast and ready to start the day. And... might I just mention that leftover waffles make a fabulous PBJ!
|*Makes 5 cups of Mix... scale as desired.|
1 cup spelt flour
1 cup oat flour
1/2 cup flax meal
2 Tbs chia seed (optional, but healthy!)
2 Tbs brown sugar
4 tsp baking powder
2 tsp cinnamon (optional)
1/2 tsp salt
To make the mix:
Combine all dry mix ingredients into a large bowl and whisk to fully combine. Place in a lidded container until ready to use, or alternatively, pre-measure 1 1/4 cup portions into zippy bags and pack for your trip (mark the remaining ingredients onto the zippy bag with a sharpie and you will never lose your recipe!).
1 1/4 cups DIY Waffle Mix
1 cups of milk (we frequently use rice milk, but may use your favorite non-dairy or dairy version)
2-3 Tbs oil (we like avocado oil)
1 tsp vanilla extract
To make waffles:
Place the egg, milk, oil and vanilla into a lidded jar and whisk with a fork to break up the egg and combine. Add the waffle mix and stir briefly, then cover with the lid. Shake vigorously for about 10 seconds, or until the batter is nearly combined (there may be a few flour lumps left... that's ok).
From here follow the directions of your waffle maker to prepare waffles. Top with maple syrup and fresh fruit for a healthy start to the day!
*Makes about 5 waffles (depending on the size of your waffle maker)
1 1/4 cups DIY Mix
1 cup milk (or milk alternative)
1 Tbs oil (we use avocado oil - and sometimes omit the oil all together)
1 tsp vanilla extract
Mashed banana - about 1/4 cup - this is just for flavor so it's optional, but Liv's favorite!
Place all ingredients into a mixing bowl and whisk gently just until blended.
Heat a griddle to medium to medium/medium-high heat, and lightly butter the griddle. Pour pancake mix onto the griddle. When bubbles begin to appear, flip the pancakes. After a minute or two remove the pancakes to a plate. Proceed as above until all batter is used.
Top with fruit and nuts of your choice and drizzle with maple syrup or agave.
Makes about 6 four-inch pancakes

- 1 waffle iron (we use a Cuisinart Round Classic Waffle Maker)
- 1 lidded jar with 4 cup capacity (we use disposable Ziplock Twist n Lock Containers)
- Pre-measured waffle mix (we place 1 1/4 cup of mix in zippy bags with additional ingredients listed on the front of the bag with a sharpie)

- Cooking Spray (don't forget this!)
