Grilled Lime and Soy Marinated Salmon


As delightful as it is to spend a few days out of the kitchen while on vacation, coming home to a nice home cooked meal is always a treat.  Liv Life and family took a week off with a whirlwind trip up the coast of California taking in possible college campuses, local farmers markets and touring my home city of San Francisco (complete with shopping on Union Square, Cable Cars, Alcatraz and a visit to the Orpheum to see Billy Elliot!).  With nearly every minute packed to its fullest, we returned home somewhat exhausted, but filled with a week of wonderful memories.


Processing multiple memory cards of photos, a fairly quick meal was in order for our first night home and Cooking Light's Grilled Lime Marinated Salmon hit the spot from Daddy all the way down to the two little Maltese dogs.  A simple marinade of soy and lime is enhanced with minced garlic, ginger and a dash of thyme bringing a light and flavorful piece of salmon to your table.  Served with a side salad, rice and in our case a slice of San Francisco sourdough you have a meal fit for a weary traveler.  Reviews of the trip coming soon!




Grilled Lime Marinated Salmon
Adapted from Cooking Light

1/3 cup low-sodium soy sauce 
1/4 cup fresh lime juice 
1 teaspoon minced peeled fresh ginger 
1/2 teaspoon chopped fresh thyme 
2 garlic cloves, chopped  
4 (6-ounce) skinless salmon fillets (about 1 inch thick)  
Cooking spray 
4 lime wedges
Place first 5 ingredients in a blender; process until smooth. Pour into a large zip-top plastic bag. Add salmon, and seal and marinate in refrigerator 1 hour, turning bag occasionally.

Preheat grill to medium/medium high.

Remove salmon from bag, discarding marinade.  Grill, flipping fish once, until salmon flakes easily when tested with a fork.  Serve with lime wedges.

  5. Welcome back, lovely! I just made CL's Bourbon-Glazed Salmon this weekend, but am saving this one for next time. We've been trying to eat more salmon since Michael found out cholesterol is a bit high, so always looking for delish ways to cook it!

  8. Hi Kim! It's been a while since I came to your blog before my vacation. Looks like you also had a trip to somewhere. I have to catch up on your posts and see what you have cooked while I was gone. :-) I'm going to try this recipe soon as I have all the ingredients and I am still in vacation mode that I haven't spent much time in the kitchen... this sounds like an easy recipe and everyone in my family loves salmon so it's a perfect dish!
