Frozen Blueberry Pineapple Popsicles

While the rest of the blogosphere seems to be turning its back on summer and instead diving head first into fall, here in San Diego we are still in full summer ahead mode.  As much of our June and early July on the coast consists of a deep marine layer which on occasion can last for weeks, we savor each and every moment of our long awaited sunny summer days, and these last few summer weeks have been extraordinary.

Waking to full sun with no jacket required, I've spent my mornings on the patio with my cup of coffee.  The afternoon temps have reached my beloved 90º point, and have had Liv and her friends enjoying the pool, bringing us the perfect venue for a version of Coastal Living's Frozen Blueberry Pineapple Pops.

Taking mere minutes to put together and requiring a couple of hours to freeze, these fresh fruit pops are perfect for cooling off on a hot day.  Telling the girls I had "fresh fruit popsicles" or "sweet juice popsicles", they immediately chose the "sweet juice pops".  Little did they know, I only had one set of frozen treats, and whatever answer they gave they were receiving the fresh fruit version.

Gushing over how they had chosen correctly, the girls floated on their rings while nibbling on the pops and another summer favorite, frozen grapes and mentioned how cool Liv's mom was to not make them eat the fruit pops.  Shhhhh.... don't tell them that they had a healthier snack than they thought.

Frozen Blueberry Pineapple Frozen Pops
2 1/2 cups fresh or frozen pineapple chunks
1/3 cup unsweetened pineapple juice (we used TJ's Organic Strawberry, Peach Banana Juice)
1 Tbs honey
1 cup fresh or frozen blueberries

Place pineapple, juice and honey into a blender and blend until pureed.  Place most of the puree into a bowl and set aside.  

Keeping about 1/4 cup of the pureed mixture in the blender, add the blueberries and blend, again until pureed.  (Note, if using frozen berries you might have to add a bit more juice if the mixture freezes up during blending).

To make the pops, pour either the pineapple mixture or the blueberry mixture into the mold and fill up part way (amount is up to you).  Finish off with the alternating puree, place a stick in the center and freeze until frozen.  


  1. Yes NC is still quite summery although I"m starting to long for Fall. These pops look delicious, love that first photo - can I eat a pop while swimming in the pool, or is that against the rules? :)

  2. I am loving the temperature dropping just a tad for us here in CT. I love Fall, so the fact that it is cooler in the mornings and then high 70s low 80s for the day is perfect for me.

    However, I would still enjoy one of these popsicles even if it isn't 90 degrees ;-)

  5. These pops sound amazing! Being in central Texas, I understand your weather. It is still nice and warm here and doesn't really cool off until January. And by then, we will have moved to Florida so I have no real Fall in sight. Sigh. I love Fall. I need to get me some pineapple. These need to be in my life.

  6. Even here in Michigan we are still enjoying summer, even though the leaves are starting to turn. We cling to every warm day!!

  8. Aw yum. These Popsicles are bursting with flavors I like. Love the tanginess of pineapple and who does love nutrient packed blueberries?! I don't mind letting the summer linger so I can have one! :)

  9. Not the season nor the weather are going to dictate when I will get to have one of these beauties!! And I would prefer to be in that pool while I'm having one. :)

  11. We're also not quite ready to let go of summer. Although, I might change my tune after Labor Day weekend. :) These pops look so refreshing. I think I want one right now!
