Mexican Chicken Tortilla and Rice Soup


Chicken soup... it's good for the soul, right?  Liv completely agrees.  A year or so ago she found her love of chicken soup (she prefers potatoes and noodles usually) and has now (finally!)  branched out to flavors beyond the norm.

Her request last night to "make something with cilantro" led me to this spin on one of our favorites, Tortilla Soup.  Filled with her chicken soup faves - carrot, onion and chicken - we thickened the mix with a chopped tortilla.  Substituting rice for the noodles and potatoes, and adding beans and tomato, we had a Mexican flavor of her favorite comfort food.

Topped with avocado, a sprinkle of crushed tortilla chips and handful of the requested cilantro, I pretended not to watch as she hesitantly took her first taste.  Her quick smile told me we'd found something good, and the empty bowl moments later proved it.

Feel Better Chicken Noodle Soup

Getting a stomach bug is never fun... but getting a stomach bug in the middle of summer just after you finish dancing onstage at the beginning of a week long extravaganza is even worse.  Unfortunately, such has been Liv's life this last week.

As a competitive dancer she prepares all year for the National Competition, and the Spotlight Dance Cup puts on a fabulous event with Nationals hosting an exciting Elite Extravaganza, which Liv qualified for at regionals.  This competition held the opportunity to compete in a pagent-like event, Title, in addition to the pure dance part, and Liv had waited all year for this experience and we'd found the perfect formal dress for the finale.

The first day held 4 hours of elite rehearsals with the incredibly talented Jaci Royal in addition to the onstage Title competition, an interpretive solo (they play music and you just dance... no prearranged choreography) and her own solo.

The title portion went fabulously as her confidence simply glowed, and her interpretive solo was amazing.  As she began preparing for her solo though (around 9PM), she complained of her stomach feeling "off" and her extremities feeling "funny".  I brushed it off as a case of the jitters (which she usually doesn't get) and told her to focus harder.

Imagine my dismay (and guilt) when some 20 minutes after performing she found a trash can and lost her lunch.  The beginning of a long night, we chatted with the Spotlight Director who told us that missing any of the rehearsals over the next 5 days would have her out of the competition.  Changing our overnight plans and heading home, she got very little sleep that night and proceeded to spend the next 48 hours in bed, indeed missing rehearsals - the competition was over for her.

With heavy hearts we began the process of healing, and Liv's first food request was Chicken Noodle Soup.  Always a favorite when she feels the need for a health boost, the soup also does a little healing for the heart as it warms the body and brings life back into balance.

Her simple version includes the traditional ingredients, broth, chicken, noodles, and vegetables, but she proclaims the chicken must be shredded, not chopped, for the proper effect.  The vegetables also must but cut in very small shapes, the carrots preferably in little squares.


The pasta also becomes an issue if it is too big, and thankfully we had just the right pasta on hand thanks again to Hodgson Mill (they keep coming to our rescue!).  Weeks ago Hodgson Mill sent us a care package including some of their new Ultragrain with Quinoa pastas, and I hadn't had a chance to do much else other than look at it.  Liv had commented on the "cute little elbow noodles", and when talking about her soup, those cute little noodles made the perfect addition.

Made with whole wheat durhum as well as quinoa flours, the Ultragrain noodles bring a slightly nutty flavor and an amazing texture to the bowl (they don't get mushy).  Doing my best to pack this Feel Better Soup with as many nutrients as possible, the quinoa made a nice addition without the actual quinoa texture (which was not allowed in the soup).

Bringing needed fiber as well as a nice dose of protein, the "cute little elbow noodles" combined with perfectly cut square carrots, little moon shaped celery, not too big shredded chicken and a steamy chicken broth enhanced with a bit of garlic and thyme for the perfect feel better meal.

Whether you are healing a head cold, getting the stomach slowly working again or fixing a heavy heart, this Feel Better Chicken Noodle Soup is sure to do the trick.

Chicken Salad with Quinoa, Mango Chutney and Avocado

Chicken Salad with Quinoa and Mango Chutney

Every once in a while a dish comes together so unexpectedly wonderful that sharing is a must.  This Quinoa and Chicken Salad features some of my favorite ingredients and last night, became a dinner the entire family enjoyed.

While quinoa has become an all time favorite ingredient of mine, my family has been a little slower on the uptake.  Frequently looking at my concoctions with a, "No thanks... I think I'll have something else" attitude, they haven't really embraced the ancient grain (actually a seed) like I have.  Enter a little education** along with a dose of peer pressure and lately they have become more accepting, even mentioned that this salad is welcome any day I'd like to make it.

Protein packed with the quinoa/chicken combo, nutrients achieved an even higher level with the addition of a perfectly ripe California avocado.  Adding jicama for a crunchy texture, a dressing flavored with mango chutney rounded out the picture.

Perhaps not the most beautiful dish in town, Chicken Salad with Quinoa and Mango Chutney makes up for it with flavor.

Roasted Whole Chicken with Smoked Paprika

There's something about the aroma of a roasting chicken on a chilly evening that makes fall so appreciated.  After months of watermelons, grilling, and salads, even I'm ready for a nice, juicy chicken.

Roasted chicken is one dish I can always count on making the kids happy.  Clean plates abound, and requests for seconds are music to my ears.  Even the pups get in on the action and enjoy a few slices with their regular fare.

Rubbing these few ingredients onto the chicken couldn't be easier making this an ideal busy weeknight dinner.  Just before school pick up I prepare the chicken with the rub, and allow him to come to room temp as I gather the kids from school.  Popping him into the preheated oven about 4 PM, I have dinner on the table by 6, and if I've been ultra organized, the sides are already done and I have a few hours to finish up other activities (like writing blog posts!) while the chicken nearly prepares itself.

Tender, juicy and full of flavor, this chicken is sure to be a family pleaser.  The aroma alone is guaranteed to have hungry teens willingly appearing from all corners of the house and proclaiming you the best cook ever.

Grilled Greek Chicken and Zucchini Skewers


I feel loved.  While my Mother's Day was beautiful indeed, it was the next day, my own personal Mommy's Mother's Day, that was even more special.

Our actual Mother's Day was extraordinarily busy as usual... up early with the pups, prepping dinner, heading out to visit Liv Life's MIL in assisted living who was unable to join us at our house for the first time this year, then heading home to spend the evening with my family, my parents and my FIL.  Dinner had to be cooked, the salad prepped, table set and drinks poured.  Mom eased the evening by bringing dessert, but we did have dishes, and lots of 'em to clean.  Soon though, we were settled into a rousing gave of UNO which had us all in stitches as my FIL continually passed a "draw 4" wild card to my dad whose hand was filled to the brim with cards.

Laughing, the evening passed all too quickly, but was enjoyed by all.  One of those spectacularly fun times that won't ever be forgotten.  But by the end of the day I was tired and fell quickly into bed.

Monday morning came in the blink of an eye and had me back out the door driving my son to school and making a quick stop at the gym.  Liv, home with her dad on an infrequent day off of her school, called me at the gym wondering when I was going to be home.  I didn't think much of the call, and told her 8:25.

As summer is approaching at the pace of a supersonic fighter jet, I pushed myself through a few extra sets while finishing up my workout and hit the road just a bit late.  Little did I know, my extra 10 minutes had Liv worrying up a storm as she had planned a special morning for me.

Walking in the door I was greeted first my the squealing with excitement pups, then by a smiling girl holding a sign proclaiming this day as "Mommy's Mother's Day".  My own special day, she explained, as I had had somewhat of a busy Mother's Day the day before.

Greeted with a bone crushing hug, I was then led to the table where she had prepared a protein-rich breakfast of an egg white omelette with sauteed veggies and a scoop of my favorite Greek Quinoa Salad (she knows I'm trying to get back into some sort of swim suit shape).  A frosty glass of OJ waited right alongside my perfect temperature coffee (I like it cooled), and a sprig of the sweet pea bouquet my dad had thoughtfully brought me the night before garnished the side of my place mat.

Feeling loved indeed, I settled down to my breakfast, and we all reminisced about the prior evening... how fun it had been, how much we missed having my husband's mom with us, how good those Greek Chicken Skewers had been, and how thankful we were that we had some left over for lunch.

Inspired by Cooking Light, the Greek Chicken Skewers infused with lemon, did indeed transport us to the balmy shores of Greece.  Flavored with oregano and garlic and served with our new favorite Greek Quinoa Salad, the skewers cooked quickly on the grill and made for a tasty and fairly easy dinner for this mom to whip together on her busy Mother's Day.

Savory Mushroom Chicken Crepes




Simplicity. The more I discover about food photography and what catches my eye, the more I appreciate simplicity.  While I adore gorgeous images of beautifully set tables and of course, of attractively styled food, I truly love the shots that catch the pure beauty of the ingredient itself.

Seemingly fairly easy to take a pictures of a vegetable or a piece of fruit, my last Food Photography Challenge truly caused me to stretch myself with an assignment to shoot a vegetable raw and then prepared.  For my final submission I chose scallions fresh from my Dad's garden - dirt still clinging to the tender, fragrant roots and then our favorite Scallion Biscuits.  Taking less than 10 shots to capture my favorite image, it was the simplicity of the scene that, in my opinion, brought balance to the photo.

Unstyled (the scallions were simply place on a cutting board), natural, and raw, taking such a shot is not always as easy as I thought.  (From our Photo Challenge Group, also see Stacey Siegal's stunning shot of Romanesco, magazine worthy indeed).


The weeks prior to the challenge had me shooting sweet potatoes, grilled onions and fungus... the every popular mushroom.  Taking over 200 mushroom shots, I only found a few achieving the simplicity I was looking for.  The savory crepes created from the mushrooms, though, were a delicious treat that I eagerly polished off after finishing their photos.

A Cooking Light recipe from one of my "go-to" books, Cooking Light Chicken, I used my new favorite crepe recipe from Alton Brown to wrap the creamy goodies, creating a wonderful light lunch.  The tender mushrooms sauteed in chicken broth and white wine, if desired, are mixed with onion and chicken and then lightly "creamed" with a touch of cremé fraîche.  Simple, tasty, and a nice change from the sweet crepe we are used to, these savory wraps have made it to our dinner rotation.


Creamy Chicken and Mushroom Crepes

1 batch savory crepes (We like Alton Brown's Savory Version)

1 teaspoon butter 
1 cup vertically sliced onion 
1 garlic clove, minced
3 cups thinly sliced baby portobello mushroom caps (about 6 ounces) 
3/4 teaspoon salt 
1/4 teaspoon freshly ground black pepper
1/3 cup dry white wine 
3/4 cup fat-free, less-sodium chicken broth 
2 teaspoons chopped fresh thyme
1/4 cup crème fraîche (or sour cream)
2 cups left over chopped chicken
Thyme sprigs (optional)

 

Directions from Cooking Light:  

Melt butter in a large nonstick skillet over medium-high heat. Add onion and garlic; sauté 2 minutes or until onion begins to brown. Add mushrooms, salt, and pepper; cook 3 minutes or until liquid evaporates and mushrooms are tender, stirring frequently. Add wine, and cook 3 minutes or until liquid almost evaporates, stirring frequently. Add broth and fresh thyme; cook 2 minutes. Remove from heat; add crème fraîche, stirring until well blended. Add chicken, tossing to coat.

 

Place 1 crepe on each of 6 plates. Spoon about 1/3 cup mushroom mixture into center of each crepe; roll up. Garnish with thyme sprigs, if desired. Serve immediately.

Chicken Chowder with Swiss Cheese, White Beans and Butternut Squash


I'll admit that soup has never been really high on my favorite list.  My poor husband, the man who could eat soup each and every day, is a sport though and doesn't really complain about my lack of soup preparation.  However, when a steaming bowl of soup, stew or my favorite combo - "stoup", is placed in front of him, I'm always pleased to see the elation on his face.

As my over-indulgent baking, cooking and eating holiday season has somewhat depleted my urge to spend time in the kitchen, soup has begrudgingly become my unexpected friend.  Easy to toss together, filled with all sorts of ingredients and simple to make large amounts so that I don't have to cook tomorrow, soup has graced our table no less than 3 times in the last few weeks.  I think that might be a record.  And... I think I might even be liking it.

This chicken chowder from Cooking Light is an old favorite, and a note scrawled across the bottom, dating back to 2001, reminds me that my husband proclaimed it a keeper... and keep it we have.  An entire meal in a bowl, the chowder is filled with chicken, beans and veggies, and receives a silky, creamy touch from Swiss cheese and half and half.  The original recipe calls for wild rice, but the Trader Joe's Brown Rice Medley that I use adds even more textures and flavors with the addition of brown rice and black barley.

I've been told, soup is good food...

Back to the Future.... Our 2011 Top 10


As the year comes to a close, I always enjoy looking back and remembering the special events that I will carry forward into the New Year.  My personal life is filled with wonderful memories... from my autumn travels in Italy to Liv's Championship performance last summer in Las Vegas at Nationals.  In between, travels and time with close friends, dinners with my parents, lunches with girlfriends and weekends with the Dance Moms all brought treasured moments that I will bring with me into the future.

Life, as always, has kept me in balance, and here at Liv Life I make a decent effort to maintain a balance of healthy meals and sweet treats.  A review of our statistical Top 10, however, shows absolutely NO balance.  Sweets and treats all the way, with assorted Krispie Treats taking three of the Top 10 slots.  It would seem that the world, very much like Liv, has a sweet tooth.

Without further ado, I give you our statistical Top 10 of 2011... and then for a bit of balance, I've thrown in some of my personal favorites to carry with us as we enter the New Year.

Arriving in the 10th position and making our list for two years in a row, is one of Liv's personal all time favorites:  Chocolate Banana Crepes.  Balance indeed, these crepes bring one, if not even more, servings of fruit in the banana all wrapped up in a thin, low fat, egg based crepe.  I'm proud of Liv and her efforts to perfect her crepe making skills as she frequently comes home from school and whips up a batch of crepes... just cause she can.

Number 9 brings us a neighborhood favorite, and a guest post from my good friend Dan bringing us some serious "Man Food".  Unfortunately for him, this man food has also become one of the most requested kid foods and the ladies pretty much love it too.  Cheesy, salty and not to heavy, Becky's Stromboli is the ideal Super Bowl fare and will make you the hero of any gathering you bring it to.

Decadence on a plate, but now that I think about it, balance as well with a fairly healthy pancake made with whole wheat flour and topped with bananas in addition to the sweet Maple Glaze that makes this breakfast an event to remember.

2011 was the year that we discovered Nutella... that creamy, chocolaty, hazelnut spread that brings deliciousness to nearly everything it touches.  With our love of Peanut Butter Krispie Treats, trying a Nutella version was just a matter of time.

Throwing rays of brilliant sunshine into our lives, this tender, bright cake features our own homemade Limoncello.  Bright with citrus flavors, Limoncello Lemon Cake won't last long on your table.

Continuing our love of Citrus, these Lemon Drop Jell-O shots were a hit at a friends after dinner party.  One of those "Wow!  Look at that!" plates on the appetizer table, you decide just how potent these little guys should be.

Ahhhh... the flavors of fall!  Pumpkin Cinnamon Rolls have graced our tables in all seasons for years.  Balanced with the Vitamin A rich pumpkin, these lower in fat treats are one I can feel good about serving, and also taking that second piece.

The marriage of peanut butter and chocolate is highlighted in these somewhat addicting treats.  A dairy free version for my lactose intolerant son has become his favorite after school treat.

These guys are truly Krispie Treats taken to a new level!  Layers of Peanut Butter Fudge trapped in between peanut butter enhanced Krispies, all topped with a luscious peanut butter ganache makes these treats truly magnificent and most deserving of a top spot on our list.  These treats eased the pain of Back to School.

A funny note on this post, it wasn't until over 2 months after posting that I noticed the spelling error in the title... I had "layred" in place of "layered".  Ugh!!!

My surprise of the year, these adorable shots have had more hits than all the rest of my blog posts put together.  Definitely eye catching, the shots didn't bring the punch I was looking for, but I'm thinking that could easily be remedied with the addition of more tequila.

Some of our personal favorites made it to the Statistical Top 10, but to balance out the list I've gathered a few additional Liv Life Top Picks.

Coming in statistically at number 28 we get to the first healthier post on the list.  Whole Roasted Garlic Lemon Chicken is not only simple to put together, but a total family pleaser.  With your house smelling like a restaurant, this chicken will draw your family from all corners of the house asking how soon will dinner be on the table.

One of my all time favorite appetizers.  Adorable in their single serving won ton cups, the flavors of the tropics really shine.  Mango, coconut and lime bring the chicken filling to a mouth watering level and will be one of the first appetizer plates empty on your table.

Light, healthy and filling... I never knew poached salmon could be so good!

Another eye catcher ideal for a gathering is this Greek-like Appetizer.  Featured for the first time on our New Years Table last year, I've been known to toss a few of these skewers together for an evening snack with a glass of wine.

Keeping the balance in my personal choices, something sweet is in order.  As such, this luscious dessert will round out the Liv Life favorites of the year.  Readers of Liv Life may have noticed my fondness for the heavenly Grand Marnier, and this cheesecake definitely fit the bill.  Spiked with Kahlua AND Grand Marnier, the flavors mixed with the chocolate and brought 2011 to a resounding finale.

South of the Border Chicken and Butternut "Stoup"


I love the word "stoup"...  A perfectly apt description for the thicker soup that is not quite a stew.  Filled with all the soupy goodies, yet not brothy like a watery chicken noodle soup or bullion scattered with a few sliced scallions.

Stoups are thick, hearty and filling, and easy to make as they are all in one pot.  Perfect for that crock pot, however I always forget I have one and make mine on the stove.
Stumbling upon a recipe printed from way back in December of 2000, this stoup fit the bill on our "freezing" and rainy San Diego afternoon and warmed our bones while filling our stomachs.  Yes, I stood out in the drizzle while I grilled my chicken (nearly got frostbite...), but I'm guessing it would do just as well baking in the oven before being shredded.

Spiced with cumin and smoked paprika, black beans, butternut squash, corn and a can of tomatoes round out the ingredients for the pot, and a steaming bowl of flavor topped with your favorite garnishes such as avocado, grated manchego and cilantro will warm your hungry family from head to toe.  Word has it that the stoup is sure to ward off any frostbite you receive from the outdoor grilling as well.

Grilled Chicken Kabobs with Bacon


I love the Secret Recipe Club!  I've been lucky enough to meet yet another wonderful blogger through my club assignment, and this month I almost feel as though I've met a soulmate (she just doesn't know it yet!).

Chris, from The Cafe Sucré Farine, is a delightful wife, mother and grandmother with a flair for food and photography.  My first visit to her site had me printing recipe after recipe and she is a girl after my heart with her mouth watering grilled dishes.  Immediately catching my eye was the Tequila Citrus Chicken with Grilled Peach and Raspberry Salad.  However, just a few scrolls down I switched gears and found the Peach and Cherry Scone Shortcake quickly followed by a Yeasted Belgium Waffle.

Having taken Spanish while in high school, my understanding of the title of the blog was left as, "Something foodie with coffee and sugar...".  Chris' story however is far more interesting as it is simple.  A set of canisters in her kitchen with the French words for Tea, Coffee, Sugar and Flour (Thé, Café, Sucré, and Farine) led to a family friend (and frequent lucky "enjoyer" of her treat filled kitchen) to say, "That's it, Mrs. S! The name of your restaurant -The Café Sucré Farine"!  After reading much of her blog,  I'm here to say that's a restaurant I'd visit any day.  Chris' smile and friendly way of writing has you feeling like you have been welcomed into her warm kitchen and you are eagerly awaiting the next treat fresh from the oven while enjoying a nice afternoon chat.

With an ever growing stack of printed recipes our choice was narrowed when we got to planning dinner and I stumbled upon a recipe entitled Fabulous Grilled Chicken Kebobs.  The title alone caught my eye, but it was her photo that pushed me over the edge and got to cooking.

At this point I have to admit that I am not really a fan of bacon, however my family adores the cured meat whether it's a simple crispy/chewy piece of bacon or featured in a dish.  The smell alone does me in, but I especially don't like the "feel" of  the uncooked bacon.  This recipe pushed me to the edge with a requirement to actually puree, yes... puree, the bacon and then rub it over the chicken.  Strange and I didn't really like doing it , but after the first taste, I deemed it absolutely and totally worth it!

Two strips of uncooked bacon are indeed pureed with a little sugar, smoked as well as sweet paprika and salt.  Rubbed over the sliced chicken and then threaded onto skewers, the kabobs are then grilled and brushed with BBQ Sauce for a delicious finish.

Tender, juicy, and simply exuding flavor, these kabobs were indeed fabulous.  The entire family reached for seconds and mommy was the star of the evening (I love those kind of nights!).  Most enjoyable though, was watching my dog salivate as I chopped up a little leftover piece to mix in with his kibble.  He literally leaped to his bowl and within minutes had licked it clean.


Chris, what a treat it has been to "meet" you!  I will forever be an ardent follower of The Café Sucré Farine and I look forward to more delightful dishes coming from your kitchen.

Slow-Cooker Spicy Buffalo Chicken Sandwiches


After a total of nearly 18 hours at the theater in two days, Liv and I returned home Saturday night around midnight utterly exhausted.  Our girls rocked the stage!!  I saw most of her solo through my tears of emotion, but what I saw was enough to know that she had done well.  My husband had flown across the country and made it just in time to see her take the stage.  My dad called my mom in rehab (hip replacement) so she could listen on the cell phone and the laughter and applause from the audience was carried across the Verizon phone network to her little room 30 miles away, bringing tears to her eyes as well.  An hour later as they announced awards we were thrilled to hear she scored well that evening and received a second in her category.

The next day had us heading back to the theater for the group numbers where the girls once again lit up the stage.  I feel a bit of "ownership" for each of the girls and my heart was bursting with pride as I sat behind an older couple during the small group tap number and listened to them laugh out loud, comment that they loved the costumes and say that this was one of the best numbers they had seen all day.  Yep... those were MY girls!

In less than two weeks we get to head out and do it all over again.  Liv is ready to start packing her bags!!

With both Liv and myself a bit limp the following day we spent a good amount of time sitting on the couch watching tv together.  My son joined us for a while and soon our stomachs were grumbling.  With Daddy back on the travel road, I had earlier turned to the slow cooker, filling it with chicken, onions and spices and let it "do its thing" while we got our energy back.

Before I knew it the house was aromatic and dinner was ready.  Tender chicken was shredded and returned to the somewhat spicy tomato based sauce flavored with Frank's RedHot Sauce, cider vinegar, and garlic.  Served with a bowl of sliced oranges and a side of slaw we all enjoyed the meal and decided to leave the dishes for the next day.  An early night was had by all...

Grilled Garlic Herb Chicken... with a little help from a package


It's been one of those weeks... you know, the one where you start the week thinking you have it all together - the menus planned out, ingredients purchased, schedules set and manageable, and everything looks so darn organized.  How does it all fall apart so quickly?

First of all, the more than 178 miles I put on the car in six days without really leaving my little town of Carlsbad has me cringing when I need to head back out on the road.  $80 took care of the empty tank, but I've watched the gas meter drop ever so quickly.  Between the kids contradicting school schedules, trips to drop and pick up my son at the gym, Liv's regular and extra dance rehearsals, visiting my mom who is recovering from hip surgery, the store for regular groceries and then the last minute shopping for the big dance show tomorrow, I'm exhausted.

Add in Liv's last minute costume arrivals for the dance season (she dances competitively for a local studio) and you have me sewing in my "spare" time (I don't know how to sew... you can imagine my "pretty" stitches), applying rhinestones to any bare spots on the fabric (I have a new appreciation for sparkle) and much to my son's amusement he found me on my knees out in the back yard rubbing an old pair of his jeans on the concrete for a "well-worn" look and holes in the knees for the small group tap number that has them dressed like farmers.  I still have elastic to sew onto the hats, a crown to rhinestone and socks to trim.  The show is tomorrow at 9:30.  I think I'll make it.

With my head swirling with altered schedules, the menus somehow got lost in the fog and as dinnertime would approach 6 human, 4 canine and 2 feline hungry eyes would begin looking my crazed direction wondering when dinner would arrive.  Realizing it was 6 PM and I had thawed the chicken but never done anything with it I gave in.  I'm not really a package girl, I like to prepare our meals fresh without the unknown ingredients that sometimes come along with things in a box or bag.  I do organic, fresh and local when I can, but sometimes a girl just needs a little help.  I turned to the beloved package.

A few years ago my friend Becky (of Becky's Football Stromboli) had us over for dinner and served the most wonderful Peppered Chicken.  Fresh from the grill it was tender, flavorful and one of the best meals I'd had in a while.  Frequently we share recipes and I immediately asked for this one.  She casually comment she'd show me later.  As we cleaned up the kitchen she tossed a McCormick Grill Mates Package labeled "Peppercorn & Garlic Marinade" my direction.  My jaw dropped... this awesome chicken I had just raved about was from a package???  Yep.  It was indeed.

Since then I have stocked up on the Grill Mates for just the occasions that this week provided.  (Note: Neither McCormick nor Grill Mates knows that I'm writing this post, I have received nothing from them in any way... but would happily test anything if they offered!!).  Requiring meat (chicken, beef, pork), oil, water, sometimes vinegar and the packet, dinner is on the table in about 36 minutes from start to finish (assuming you have thawed the meat which on occasion I've been known to forget to do).  Our favorite is still the Peppercorn & Garlic that Becky made for us, but the Chipotle Pepper and Garlic Herb and Wine versions are also very high on our list.  I have yet to find one that the entire family is not pleased with and never have a complaint when I serve the freshly grilled, tender and tasty chicken.

A 15 min bath in the marinade and another 15 minutes on the grill has the meat part of the meal complete.  Frequently I toss oiled onions and peppers onto the grill along side the meat, add a simple tossed or bean salad to the serving plate and you have all those eyes staring at you now smiling with pleasure (well.... except for the cat who gets the same can every day - her choice).  Then before the fog clears you are back to rhinestoning gloves and costumes and remembering that you forgot to pick up the tan fishnet stockings at the dance store...


Grill Mates Pepper Corn and Garlic Dinner

1 Packet Grill Mates Marinade
4 chicken breasts, boneless, skinless
oil for the veggies (I use an herb dipping oil)
sliced onions
sliced red peppers
asparagus
Bean Salad (leftover from yesterday)
someone to do the dishes (anyone??  anyone??)
