Chocolate Strawberry Pound Cake

Chocolate Strawberry Pound Cake

Nothing says spring quite like heading to the farmer's market and letting the sweet scent of ripe, juicy strawberries lead you to the best stall in town.  With strawberry season at its peek here in San Diego, this is a weekly event for me, and with this month's Blogger Clue Society's assignment being "spring", strawberries seemed the appropriate choice.

Today we head back to Michigan for another day at my favorite farm with Wendy from A Day in the Life on the Farm where I'm hoping spring has finally spread her wings.  Apparently April blew in with even more cold weather and snow, and Wendy's talk of frozen ponds and snowy fields is somewhat unimaginable here in my San Diego world.  A few new puppies seem to have brightened their cold world though, and I'm eagerly awaiting more photos of these cute little guys.  (Wendy, we adopted brothers too and simply can't imagine life without them!)

But even all that snow hasn't stopped dear Wendy from posting a spring and strawberry filled recipe that I found so special it made its way to my Easter table.  How does a slice of Chocolate Strawberry Pound Cake sound to you??

I know, right?  It sounded irresistible to me too.  Rich and chocolaty, and sweetened with juicy, seasonal strawberries, we altered Wendy's recipe slightly to make it dairy-free for my family.  And as a personal note to Wendy, my Father-in-Law sends his heartfelt thanks for completing our meal in such a "grand" fashion.  He says he can't wait to see what you bring for him next year!

Now won't you join me as we travel the world for spring recipes from the rest of our Blogger Clue Society?  Let's see what spring means to them!

Chocolate Pumpkin Cake with Spiced Glazes

For me it's all about the glaze... or in this case, the glazes.  This Chocolate Pumpkin Cake begins with a sweet, plain powdered sugar followed by another sweet glaze, this one filled with holiday spice.

Actually, we usually serve this cake at bbqs and picnics in summer in addition to pumpkin (holiday) season, and last year it made a special appearance at a fundraiser for Liv's high school dance team.  While she's not on the team this year, we've still had a request to bring the cake for the fundraiser next weekend and the ingredients have been assembled.

Moving into the holiday season I find far too many high calorie indulgences, and this beauty keeps me in line.  I found the recipe years ago in an Eating Well Magazine, and while it's still "cake", it's a lower fat version that includes a decent dose of pumpkin to up the vitamin content and make me feel not quite so guilty when I reach for slice number two.

Chocolaty enough for any chocoholic and doused in not one, but two sweet and spiced glazes, this cake goes a long way to serve a crowd.  Sliced thinly we've been known to get nearly 20 pieces out of the cake, and it's so popular there usually aren't any leftovers for me to bring home.

Decadent chocolate, enhanced with seasonal spices... this one has earned a top spot on our list of favorites.

Chocolate Pumpkin Cake with Spiced Glazes

Chocolate Pumpkin Cake | Liv Life

Welcome to Christmas Week, a multi-blogger event co-hosted by Kim of Cravings of a Lunatic and Jen from Juanita's Cocina! Each day we will be celebrating the holidays with a different set of Christmas-themed treats, as well as a fabulous Christmas giveaway.  We hope you enjoy this celebratory event and that you will tune in each day starting today, Monday, December 9th and ending Saturday, December 14th.

    -----------------------------------------------------

Chocolate Pumpkin Cake | Liv Life
Usually I'm behind the power curve when it comes to getting involved in blogging events, but this week I'm actually involved!  Celebrating all things Christmas with a multitude of blogger friends, we're bringing you treats for the holiday as well as a giveaway every day.  Liv Life will be participating today, Wednesday, Thursday and Saturday, but don't forget to keep an eye out for posts on Tuesday and Friday as there's a new giveaway in combination with delectable treats each and every day!

Today we're bringing one of our favorite Christmas Treats.  (Well... I know I'm supposed to post Christmas treats, but I have to admit that this Chocolate Pumpkin Cake is something that I stock up on seasonal pumpkin for as we've been known to bring it to summer bbq's as well).  But for today, it's for Christmas, and a wonderful addition to any Christmas Party it is.

With the indulgence of the season, this cake with it's lower fat content and a touch of whole grains is one I love to make for the holiday season.  Adding pumpkin puree kicks up the nutrition content even more, and while I don't think we can really call it "health food", it's definitely not as indulgent as some of the other treats we've been sampling these last few weeks.

Chocolaty and doused in not just one, but two spiced glazes, this moist cake goes a long way to serve a crowd.  Sliced into thin slices, we've been known to get nearly 20 pieces out of one cake, and it's so popular, often there are no leftovers for me to bring home.  Decadent chocolate enhanced with seasonal spices... this one has earned its place on the top of our favorite list.

And now that we've had a treat... how about that giveaway I mentioned??

Today's #ChristmasWeek giveaway comes courtesy of Magimix by Robot-Coupe. Magimix has an impressive history, and is the inventor of the first food processor for home cooks. Lemon Cornmeal Olive Oil Cake

Lemon Cake on cutting board with Lemon Glaze

While I've been told often that I should be morally against the 5 furlough days our local school district is imposing on our schools this year, I'm secretly loving these extra days off.  Sprinkled throughout the year, these extra days seem to come at the time when we most need them, and to be honest, I'm quietly celebrating each and every one of them.

Lemon Olive Oil Cake slice on blue plate
My son, a junior in high school, is working harder this year than I ever did even when in college.   With A/P English, Honors Chem and Spanish along with the rest of his classes and after school activities, his days last long into the night.  I've this year given up waiting for him to go to sleep before closing my own eyes as there is no way I could live on the little amount of sleep that he gets.  He's discovered espresso, not for the flavor, but as the caffeine stimulant that helps his mind stay clear just a little longer, and he's ever so welcoming of Saturday mornings where he sleeps till noon and often heads back to bed hours earlier than during the week.

With Valentine's Day, 2013, being one of those beloved furlough days, we embarked on this President's Day weekend with 5 days of no school.  Heavenly extra hours are being spent resting the kid's tired bodies, and I enjoyed waking to the sun actually being over the horizon instead of just beginning to erase the night.

    Sliced lemons

As my boy rested his weary head, Liv and I puttered around the kitchen and she proclaimed the moment perfect for baking.  Our tree laden with at least 50 perfect lemons, something sweet and tart seemed to fit the bill, and a quick recipe search into my mounds of saved recipes found a Lemon Cornmeal Cake by Abby Dodge.  Liv turned her nose up at the sound of the cornmeal, but I told her if she didn't like it we would try something else.  Having found Abby's name attached to at least 4 of the recipes I've used in the last few weeks, I had no doubt that this one would be a winner just like all of the rest.

I first "met" Abby when I made her 4 ingredient Nutella Brownies and have been loving her recipes ever since (our last being those fabulous Peanut Butter Sandwich Cookies we made for Super Bowl).  Taking those Nutella treats to one of Liv's dance events, my baking status rose by leaps and bounds as the girls devoured the little bites in mere minutes.  Since then I've noticed that many of the recipes that catch my eye in magazines such as Fine Cooking or various online websites often have the same name, Abby Dodge, attached to the byline.

    Olive Oil Tasting
Olive Oil Tasting - Puglia, Italy
Sending Liv out to pick fresh lemon, I set to pulling out the pantry ingredients, and in no time our Lemon Cake was mixed, poured into the round cake tin and headed for the oven.  The only change we made to the recipe was the substitution of my precious Citrus Olive Oil that I carried back from our trip to Italy last summer.

Purchased at the olive field itself, our visit to the family owned business gave us an inside look at the production of this liquid gold.  Deep in the boot of Italy in the Puglia region, this little farm dates back to 1917 and the oil became a must have when I heard the word "organic".  Add to that the tasting we participated in, Liv and my son were the two to insist on the citrus flavor ending up in our suitcase.

Having saved the oil for just such a recipe, we swapped out Abby's butter ingredient for our precious oil and sat back to wait for the finished product.  Mixing together a tangy, lemony glaze, Liv enjoyed creating the perfect drizzle and I have to admit that we didn't wait for the cake to cool before slicing ourselves a taste.  With eyes the size of the giant lemons from our tree, Liv immediately proclaimed this cake "utterly divine", and she completely forgot that she had questioned the addition of the cornmeal.

Sweet, tangy and with a perfect crumb, I'd suggest making two of these cakes as one just doesn't seem to last very long...

Football Food - Super Bowl Food is here!

Around the first grade my boy discovered football.  After his first touchdown pass at the Y his head was filled with dreams of becoming a famous quarterback, and collecting football cards by the dozens became an all consuming obsession. Simply throwing the football with Daddy could go on for hours after Daddy's arm gave out, and the Super Bowl?  Well, it became the pinnacle of life.

Since throwing our first Super Bowl party some nine years ago, times have changed.  The first party found a couple of 6 year old boys dressed in their favorite jerseys embracing the game with their dads, and deeming the day "Our Day of Eating Junk Food".  Pringles, M&M's, and sugar-filled soda filled the tables and everyone was happy.

Fast forward nine years and those cute little boys have transformed into handsome young men with car keys.  Their football interest, however, has waned and now they don't even show up for the game, preferring to spend their afternoons at the beach surfing.  While the parents may have matured slightly as well with a little extra gray in our hair and more pronounced smile lines around our eyes, we can still rock a football jersey.

At its peak, the Liv Life Super Bowl Party had no less that 50 guests squished into our average-sized family room around our old-fashioned, non-HD TV with pieces of Becky's Famous Football Stromboli in our hands.  Those Pringles and M&M's have remained a staple on our football table, but these old favorites are now accompanied with some higher end football food choices such as homemade sushi, Coconut Shrimp, Margarita Jell-O Shots and of course my husband's old family Queso recipe (shhh... don't tell anyone, but it's cream cheese melted with a can of Hormel chili - we have it once a year.).

Unfortunately, this year my husband's schedule has him out of town on Super Sunday, and as such we will not be hosting our special group of friends for what has become a tradition for the last 9 years.  As he flies off to some far away city, I think I will be a bit sad in my empty house, but the special memories of years past will carry me through.  As a change of pace... maybe Liv and I will actually go shopping.

Over the years we have lived an evolution of our Super Bowl Party and have discovered what works well along the way.  With just a little planning you too can have a table set for a feast and perhaps even outshine those 49ers.

    Planning your Party

First of all, don't try to undertake everything yourself - have your guests bring a dish.  In the past we organized guests and assigned salads, main foods, desserts, etc., but with our Super Bowl Party Evolution came a more relaxed attitude and we simply asked everyone to bring whatever they deemed their favorite Football Food.  Yes, some years we had lots of chicken wings and stromboli.  Other years though, brought an even balance of all things football.  Either way it was alway fun.

The Party Store.  While I'm not usually a paper/plastic disposable product fan, I do allow myself to be a little less green on Super Bowl Day.  Football themed appetizer plates and napkins from the Party Store don't cost much, save lots of cleanup time and bring a football party flair to the table.

Plastic cocktail sized cups save broken glass on the floor during those inevitable dropped cup moments, and a cheap, football emblazoned plastic table liner makes cleaning up a breeze.

Liv Life Note:  I couldn't bring myself to drink wine out of a plastic cup, so real wine glasses are always on our football table.

Soda and water - always popular with kids as well as adults, however buying full sized cans of soda often left me with half full cans scattered around my yard and house at the end of the day.  Our Super Bowl Party Evolution had me buying litre bottles of soda in place of full sized cans and supplying plastic cups (place a sharpie in the cup area for people to write their names on the cups).

For water I placed pitchers of tap water around the food table and drink area, and filled the cooler with the smaller, almost kid-sized, single serving water bottles which I found would more often be emptied than the larger sized single servings.

Cocktails.  Each year our Super Bowl Event featured a special cocktail in addition to beer and wine.  Margaritas are always popular and our Sunny Citrus Blush was also an oft requested libation.  The goal though, is to not have the host also be bartender, hence spending nearly the entire game filling drink orders.  Coolers of beer become self serve with an attached a bottle opener to the side of the cooler and a stack of those familiar red solo cups.

If you would like wine at your party, place a few bottles out along with the glasses and put the opener within reach.

For our mixed cocktail of the day, our only requirement was that it must be mixed ahead of time.  My husband obtained a not-so-pretty but ever-so-useful plastic blue camping jug which made its appearance every year on my "pretty" buffet table, but which also gained a reputation for always containing something worth trying.

Chips and Dips.  In the early years I found that I over did the food.  I worried that someone might not like a certain type of chip or dip, hence I provided several choices which filled up our table and ended up leaving decent portions of each remaining at the end of the game.  Evolution brought tortilla chips with one or two dips along side and then empty bowls and less waste.

Hot food.  Keeping hot food to a minimum allows the hostess to spend more time with her guests rather than cooking in the kitchen.  With as much prep work done in advance as possible, I would have a dish or two that could to be popped into the oven in a flash, then simply served when done.  I would usually plan a hot dish (stromboli, shrimp, wings) to be ready as people arrived, then prepare another to be ready at half time as the half seemed to bring on a sort of grazing frenzy with everyone fueling up to get through the 2nd part of the game.

Pools and Betting.  Betting pools are always popular and seem to increase interest in the game.  Everyone, even those not really interested in football, would be watching scores and keeping track of plays as they checked their numbers.  Lucky to have a neighbor takeover this responsibility, we had the simple "square" pool which scored on the game quarters and finish, in addition to a trivia/luck pool.

With the trivia/luck pool, the first page included 6-10 historical trivia questions (amazingly, someone always seems to know things like "What player has won the most Super Bowl MVP awards?"  - Just FYI, it's my man Joe.).  The back page included more luck-type questions like, what type of commercial will be first?  Will the first score be from a pass, run or other?  Will the winning team win by more than 10 points?  etc.

With the Evolution of our Super Bowl parties, or perhaps simply our maturing ages, our tastes have changed (I would say improved!) and have included all of the following "football food" over the past few years

Orange Angel Food Cake - A Guest Post by Liv

With my Mom's birthday being in late December, we always make an effort to separate her day from the Christmas Holidays and to make the day a celebration all its own.  This year Liv was instrumental in choosing the cake we made for Mom, and here, in her first Guest Post of 2012, she will fill you in on how she came to decide on this special Angel Food Cake for Susu.
    -------------------------------------

For Christmas many girls get things like makeup or clothes, but for me, this year I got something very special from my grandma.  This year my grandma gave me a guardian angel pin.  The golden angel is meant to be worn on my shoulder and will help guide me through the days and nights and brighten my life.  Now, when I am not wearing the angel I keep it in a special heart shaped box beside my bed or in other words, "in my heart".

Because my grandma gave me this beautiful pin I decided to make her Angel Food Cake for her birthday dessert, because I think she is an angel as well. My grandma is one of the most important people in my life, and I know no matter what happens she will always be there for me.

It is always a great time when I am with her, whether we are making something in the kitchen, teaching me how to make gravy (which my mom can't do), or just sitting watching TV.  She always finds a way to make it fun.  I also love to play games with her and the rest of my family, like Hearts.  Even though she gives me the Queen of Spades sometimes, that is okay because I know if she could have given it to anyone else she would have (well, maybe...).

I love my grandma very much and I would not be who I am today without her.  She truly is the best grandma anyone could ever have.
      -------------------------------------

Our Orange Angel Food Cake is based on a recipe from Ina Garten, and is light and airy, indeed feathery enough for those angels among us.  With orange peel only hours from the tree in Dad's yard and a glaze made with the juice of the fresh squeezed oranges, the cake is light and bright and a wonderful way to celebrate any special day.

Chocolate Pumpkin Cake for Doug and Marie in BC

A mere sixteen months ago Liv Life sprang to life.  Little did I know then how much this little blog would become ingrained in my very being and indeed help me to "Liv" an even richer life than I had already.  From baking and cooking challenges to contacts around the world, Liv Life is indebted to our readers and supporters for the love we have felt from around the globe.

Over the months my virtual world has grown exponentially and has replaced some of the real world that I lost when Liv graduated from elementary school (where I was very needed) to middle school (where they don't need mom help quite so much).  I have blog friends who I check in with often and who I worry about when I don't see them for a few days.  I've enjoyed kid's birthdays, suffered through family deaths and celebrated new and enticing recipes along the way.  In addition, Liv and I have so enjoyed the comments left for us, often finding ourselves smiling and laughing as we read.

From Judy and Gina in Northern CA, to Dennis and Christiane (even though she doesn't like chocolate) on the opposite coast, back across the crountry to Felice in Hawaii, around the world to my new BFF Jill in Paris, and on up to Dionne and Doug in the Pacific Northwest, my life is a better place with these new found friends in it.

This post however is dedicated to Doug and Marie from BC.  Shortly after we started Liv Life I got an email from Doug, Old Doug he calls himself, up I-5 and on into BC.  Introducing himself and sharing some of his recipes from a site called the Pepper Fool, I've enjoyed getting to know this wonderful couple.

Over the months Doug has continued to email me and with each email I get to know him a little better.  While Doug, who spent some time as a photographer in the Royal Canadian Air Force, began cooking in 1947, it is Marie, his lovely wife of 62 years, who is the baker of the family.  Opening one email I was greeted with a photo of our Oatmeal Bread recipe which Marie had adapted to produce one gorgeous loaf.

Doug occasionally leaves me comments on Liv Life and after his last comment on our Pumpkin Cinnamon Rolls,

    "Old Doug in BC said...
Hi Kim...Marie read that recipe and so I had to download and print it off!
We just got a couple of squash, so away we go tomorrow. She will get the bread machine going and do what you did, but with Lactaid milk. Tell Liv to leave a couple of those for her brother! :-))!
    Cheers,
old Doug & Marie in B"
I emailed him a quick hello only to find that in the time between the comment and my email the paramedics had been to their house and had whisked Miss Marie off to the hospital with some heart issues.  Marie is a trooper, she has survived breast cancer, a pacemaker that didn't work quite right and now further heart issues.  Last I heard she was in intensive care, but was due to be released from the unit shortly.

I haven't heard from Doug in a few weeks and I'm praying that Miss Marie is doing better and home recuperating.  Wishing I lived next door and knowing how Miss Marie likes pumpkin, this virtual slice of Chocolate Pumpkin Cake (an Eating Well recipe) will have to suffice.  Filled with hearth healthy pumpkin and some whole grain flour, this lower in fat cake will hopefully give her a smile and return some of the love that they have sent my way.

Our thoughts are with you Miss Marie!  XO

    Edited 10/8/11 - 8:30 PM PST
I've just had an email from Doug, and while Miss Marie is still in the hospital she is doing better.  He visits her daily and last week all 6 of their kids were in town to visit as well.  Doug says thank you for the kind thoughts and comments, Miss Marie will see them all as soon as she comes home!
