Oodles of Zoodles with Avocado Basil Pesto and Farmer's Market Tomatoes

Are you in on the spiralizer craze?  With enough machines and gadgets in my kitchen, this is one craze I was going to let pass me by.  Who needs to clog up even more valuable counter space with another big gadget?

But after a spontaneous substitution of Zoodles (spiralized zucchini noodles) in place of pasta at a local restaurant, I'm unquestionably hooked.  Losing the pasta carbs and adding even more vegetables to my veggie dish was good enough, but the glorious texture of the par-cooked zucchini noodles pushed me over the edge.  I totally get the craze and I simply MUST have a spiralizer!

As timing often works when it needs to, days later OXO sent an offer to to try their new Hand-Held Spiralizer .  Hmmm... hand-held??  Not cluttered counter space?  And does the same job as one of those bulky spiralizer machines bringing glorious spiralized zucchini (and beets... would those be Boodles?  and carrots... Coodles?) with the twist of a hand?  If I didn't know better, I'd say OXO had read my mind.

Seriously only a few inches tall and with an equally small circumference (but perfectly sized for even large zucchini!), the OXO Hand-Held Spiralizer fits in my gadget drawer yet spiralizes like a workhorse.  Add to it the fact that the spiralizer is BPA-free AND dishwasher safe, and I think I just may have a new favorite gadget.

But would my family like spiralized foods as much as I do?  In a word... yes.  Well, except for the "Boodles" (beet noodles).  Apparently I am the only one with a taste for beets no matter the shape (I promise that recipe including beets, balsamic, goat cheese and sugared walnuts is coming for beet lovers like me!), so today we bring you a new family favorite... Zoodles with Avocado Basil Pesto and ripe summer tomatoes, a bowl of fabulousness bringing together many of our all time favorite ingredients (avocado anyone??  ;).

I'll admit it took a bit of convincing, but when a carb-loving kid hesitantly takes a bite of a dish filled with only vegetables, turns your directions and utters, "Glorious... simply glorious.", a mom can't help but smile.

Thanks also to OXO for making me smile and reading my mind to making my spiralizing dreams come true with the twist of a hand (and not clutter on my counter).  I see twirly carrots, cucumbers, sweet potatoes, beets etc,. etc., etc., in my future!

Pesto Pasta Salad... Made special thanks to ClubsGalore (the perfect Mother's Day Gift)!

EVOO and Vinegar Gift of the Month

*Valid through 5/10/15
--------------------------------------------
Liv Life Note:  I received a sample club gift and compensation for this post.  All thoughts and opinions are my own.  Please know I would not stand behind a product unless I truly liked it!
 ----------------------------------

Do you have go-to gifts for special occasions?  One of my ultra organized girlfriends always has just the gift for everything.  Be it a bridal shower, teacher thank you, birthday gift or Mother's Day treat, she always has something special up her sleeve.  Me?  I'm the polar opposite and find myself usually at a loss as to what to get, let alone where to get it.

Hence, I'm a big fan of "Gift of the Month" clubs.  Easy to personalize, simple to shop online at a minute's notice (procrastination and I are good friends...), and unique, Gift of the Month Clubs can be special and fun.  I've sent a number of subscriptions over the years, but let it be noted that even with all my hints I've been waiting to be a surprised recipient myself until just last week.

As luck would have it, an offer to review ClubsGalore (arranged by Blog Meets Brand) not only introduced me to a new (to me, they've been around since 1996) one-stop, Gift of the Month shop, but they also sent me my first ever gift!

Faced with a decision to choose from one of their 41 clubs (the tequila club so tempted me....) I plowed through categories including brownies, bath and body, wine, tea, coffee, bacon, fruit, grilling and even a college care club.

I did place that College Care Club (including gift cards, movie sized candy boxes, hot chocolate packets, chips, pretzel crisps, popcorn, mac n cheese, assorted bars and trail mix, and a box of tissues) into my cart and thought how my son in his first year of college would love it, but my perusing continued until I stopped at the EVOO and Vinegar of the Month Club.  Now as good mothers, we try to be selfless and put our kids first, but in this case I selfishly removed said college club gift and replaced it with that oil and vinegar club as a gift to me from me.

Described as "1 bottle of extra virgin olive oil and 1 bottle of balsamic or flavor-infused vinegar each month - 200 to 375 ml. artfully gift boxed", the box arrived on my doorstep just days later, and yes, it was beautifully wrapped with a bow and carefully packaged, and included a card with my name on it.

Popping the cork on the Basil-Garlic Olive Oil, the aroma of garlic sent my salivary glands thinking of salads and dipping sauces.  Paired beautifully with a honey-colored bottle of B.R. Chardonnay Vinegar, the gift sent away any lingering guilt I had for choosing a gift for me instead of my college boy, and simply made my day.

Due diligence for this review sent me to the B.R. Cohn site to check prices, and a little research showed ClubsGalore indeed brought a special and quality product in addition to a fair price.

So here's a big hint to my family... just FYI, Mother's Day, is right around the corner.  I really, really enjoyed the one month gift I received of the Olive Oil and Vinegar Club.  I'm fairly certain the bottles will be empty within then next few weeks and just so you know, a monthly box with more oils and vinegars would be such a wonderful surprise!

Furthermore, ClubsGalore is offering $5 off of your first month using the code CGMOM5 at checkout (offer valid through 5/10/15) and shipping is always free (note for Mother's Day delivery free shipping is available until April 25th, 2-Day Shipping 4/26/15 - 5/7/15, and overnight available from 5/6/15 - 5/8/15)!  Monthly payment options are available, and their site offers a "Print your own Announcement" feature free of charge.  Moms always have oil and vinegar in the kitchen, but often we won't splurge on that special bottle, so... Hint. Hint.  Hint.  :)

And what would a mom do with a delightfully infused bottle of olive oil and special bottle of vinegar?  She might brush it over artichokes just before grilling and make a lovely vinaigrette, or she might use it in a special Pesto Pasta Salad she's making for her own mom for Mother's Day.  Either way, I know she'll appreciate the monthly doorstep surprise, and you just might become her favorite child.

Sun-Dried Tomato Pesto

Sun-Dried Tomato Pesto

Hard as it is for me to believe, I have a son who is nearly a legal adult.  I have vivid memories of rocking my baby boy to sleep for his nap as thoughts of him going off to college would flit through my mind.  "Not to worry,"  I would tell myself, "that's years and years away."

Well, somehow those years have passed, and with a new UCSB Mom sticker proudly affixed to the back of my car, I find myself entering a new phase of parenting.  Gone are the days of worrying if he would look both ways before crossing the street or would put something in his mouth that wasn't good for him.  Here are the even more worrisome thoughts of will he see what he needs to as he merges his car onto a busy Southern California freeway?  Or worse yet, will he make good choices when thinking about taking a drink when he's at college?  And even more stressful, will he pick a girl that I like?

Now, I'll freely admit that whomever he chooses is already knocked down a peg because I know with her addition I will have been fully replaced.  However... there will definitely be some choices that will be better than others (oh my goodness I hope I like her!), and I've been dropping (unappreciated) hints as to who I think may be that good choice.  So far most of my "suggestions" have been met with eye rolls and "leave me alone" comments, until I mentioned Julie Morris.

Admittedly she may be a little old for him, and I'm not sure, but she may actually already have the man of her dreams, but Julie Morris, the author of Superfood Kitchen appears to me to be the perfect catch!

First off, Julie is positively adorable.  But it's her love of healthy, nutrition and good food that has me thinking she would be the perfect choice.  An advocate for healthy food and an expert on the so called "Super Foods" of today, Julie has an amazing story with her journey to a plant-based diet and a love of life-enhancing and energy-giving foods.

Presenting myself with her book, Superfood Kitchen
, for Christmas, I've made a number of recipes all with resounding success, but her Secret Pesto with Sun-dried Tomatoes inspired a recipe that has has become one of our all time family favorites.

Filled with fresh basil, sun-dried tomatoes and a few tablespoonfuls of hemp seed, no one is any the wiser that this pesto brings a healthy bent to the table.

Hemp Seed, while from the same family as the marijuana plant, does not produce the "high" inducing THC of its cousin.  It does however, provide a complete protein boasting all essential amino acids and is easier to digest than animal proteins such as meat, dairy and eggs.  Julie writes in her book, "Hemp also offers a wide range of mineras, especially iron, potassium, zinc and magnesium.  Better still, hemp is an excellent source of fiber, and is one of the few alkaline-forming seeds in nature, due to the small green filament on the inside of the kernel. " pg 30, Superfood Kitchen.

Recently hemp has been gaining status in the food world and is finding itself a featured ingredient in everything from smoothies to soups to salads and more.  Here in our Sun-dried Tomato Pesto, hemp takes the place of nuts yet retains the perfect flavors and textures of traditional versions while keeping the recipe healthy.

My soon to be college-bound son loves this recipe, and he even admitted that Julie's photo was a head turner.  Looks like he might have really good taste after all.

Savory Pesto Cheesecake Appetizer

A glass of wine, a plate of assorted cheeses, salamis and crackers... good for my psyche but nightly, not so good for my waistline.  The holidays, though, make those calories invisible until January (in my own mind anyway...) and these days are often filled with additional gatherings where I grab the chance to prep and enjoy some of my favorite beloved appetizers.

Always on the lookout for something that avoids last minute preparation, this make-ahead "cheesecake" works like a charm.  Filled with ricotta, a touch of garlic and pesto, the savory cheeses work wonderfully with crackers and are a delightful pairing with a glass of wine before dinner.

Pretty on a plate, this savory indulgence will be welcomed at all of your holiday festivities, and is sure to bring a little additional holiday cheer to your gathering.

Secret Recipe Club - Vegan Blueberry Banana Smoothie and Almost Raw Pesto Guac Salad from The Mommy Bowl

For my second month involvement in Amanda's Secret Recipe Club (where one receives an assigned blog to secretly write about) I eagerly anticipated my assignment email.  Would I bake?  Would I grill?  With our 3 weeks of on and off vacation completed I was ready to head back into the kitchen and pull out my mixing bowls.

Clicking with excitement the link to The Mommy Bowl, my stomach did a bit of a drop when I read that the author blogged about gluten free eating.  Gluten Free??  Heck... I live on gluten.  And to top that, Deanna has recently gone raw... not that there's anything wrong with that. ;)

Diving in, I stopped first at Deanna's "About" section and was immediately caught up in her carefree and entertaining writing.  Amazingly, this gluten free Mom and I have a lot in common.  We are both moms, probably similar ages (though I'm thinking I have a few years on her), enjoyed Gilligan's Island as a kid, and have been addicted to cereal.  Yep, addicted to cereal.  I wholeheartedly identified with Deanna's comments of bowl after bowl of the crunchy goodness, and yes, in my later years I've also switched to wheats and brans over the sugary kind.

Deanna though, has after some 30 years of carting around her special cereal bowl become gluten intolerant.  Reading about her journey into a gluten free world I could see a healthier way of eating and a lifestyle promoting a happier body.

Understanding more of who Deanna, The Mommy Bowl, was I began to peruse her posts in search of a recipe to try.  Caught up in her writing, I spent over an hour pouring over post after post and enjoying her special and enticing way with words.  Smiling frequently along the way, recipe after recipe caught my eye.  Who knew you could make a Triple Chocolate Cherry Pie not only raw, but vegan and grain free as well?  And get this... it sounds and looks awesome.

With 18 recipes printed I headed to the kitchen and almost immediately my teenaged son popped in proclaiming extreme hunger (it had been nearly an hour since his last Trader Joe's frozen burrito).  I offered, "How about a Blueberry Banana Smoothie?"  He pondered for a few seconds, said, "Yeah", and headed outside.

Admittedly, we do understand intolerances.  Last year my son suddenly became lactose intolerant and Liv struggles with her own lactose issues.  As such do I occasionally search vegan recipes knowing that they will be dairy free.  Frequently I adjust them adding eggs or grains, but with a dairy free base I've got a head start.

Deanna's Blueberry Banana Smoothie uses a few simple ingredients which we had on hand.  Vitamin rich frozen organic blueberries, a banana and coconut milk are enhanced with a handful of spinach for a nutrient rich smoothie packing a flavor enticing punch.

Keeping the handful of spinach a secret, I whizzed the brightly hued ingredients in the blender and served up a beautiful blueberry smoothie with a tropical twist.  Two smiles greeted the first tastes quickly followed by raised eyebrows as I explained that they were indeed drinking blended spinach in their sweet smoothies.  Pausing for a few seconds, both kids shrugged and then continued drinking, draining their glasses within a few minutes and even asking for more.

It seems Deanna is on to something.

Next I thought about myself.  With my husband out of town and the kids no longer hungry, Deanna's Raw Pesto Guac Salad caught my eye.  As eating with abandon on our Trip to San Francisco was quickly followed by Pineapple Rum concoctions on the beaches of the Bahamas I'm a bit over food at the moment.  Even I have been craving good, healthy veggies and a huge reduction in carbs and grains.

Again, all of the required ingredients I happened to have on hand.  Brilliant avocados, bright tomatoes and fragrant basil found their way into my blender along with the juice of a lemon from my dads tree, garlic and a pinch of salt.  I prefer "chunkiness" in my salad, and therefore added additional diced avocado and more chopped tomatoes to the salad part.  But here's where I did alter the recipe a bit... I grilled my zucchini along with a thick slice of onion (I'm just not a raw zucchini girl).  And then I did it, I changed the whole dynamic and added pasta.  I just couldn't help myself, but trying to stick close to the raw/gluten free theme I did only add 1/2 cup of cooked pasta for my serving.

Stirring the brilliant veggies with the whizzed pesto had my mouth watering as the aromas melded together into something special.  Setting myself at the table I dug into my healthy salad and sighed.  Yes... this was the life!  The antidote to eating with abandon and occasional rum drinks was right there in front of me and I loved every part of it.  I topped off the meal with a few nuts (raw and salt free even!) and I was one happy and very content girl.

While I don't think I'll be switching to a gluten free or raw diet anytime soon, I'd really like to thank Deanna for spurring me to explore another healthy way of eating.  My post vacation mode has me filling my plates with a greater percentage of veggies and in an effort to reduce my vacation pounds I've even put away my own cereal bowl.  Well, maybe not every night, but I am cutting way back.

Deanna, I'm your newest fan!  I will be following eagerly and feeling better along the way.  Thank you!
